Agriculture, diet, taste: trends and strategic foresight
1. Presentation of the functioning and activities of the Centre for Studies and Strategic Foresight: the issue of food as a means of understanding the challenges with which agriculture is faced; diet as a challenge to achieve modernisation and act as a driving force for the Ministry; evolution of food systems and behaviour, which are linked to the huge transformations currently impacting contemporary societies; diet as a new dimension of a “risk-based society” and of contemporary individualism.
2. The historical and sociological changes of taste and food tastes: confirmation of new nutritional qualities and attributes; new relationships with tastes, hybridisation of cultural and geographical references; the importance of social differences and generational effects; taste losing ground in determining consumer behaviour; global food trends and idiosyncrasies of French trends.
