Bruno LauriouxBruno Laurioux holds an agrégation in history and is Professor of History at the Sorbonne following his thesis on “Western cookery books at the end of the Middle Ages “(1992)

Bruno Laurioux is professor of medieval history and food history at the University François Rabelais (Tours, France).

He chairs the scientific council of the European Institute of Food History and Cultures (Tours).
